Rice seasoning adds flavor and texture to sushi rice. Rice seasoning can simply be a mix of vinegar, sugar, and salt, but I like to prepare a more traditional seasoning. I use rice vinegar and infuse it with Kombu, which adds a natural flavors similar to what you would get from MSG. Then I add salt and sweet rice wine (or regular rice wine and sugar). After everything boils and dissolves I like to refrigerate my rice seasoning for 24-48 hours, this allows the flavors to become richer. Although this rice seasoning may take a little extra time to prepare I truely suggest giving it a try, as the additional flavors it provides are worth it.</p>

<p style="text-align:justify;">First take your pot and pour about 1 cup on rice vinegar into it. Then place a piece of Kombu about 2 inches in size into the vinegar, and bring it to a simmer. Once the vinegar begins to simmer let it do so for about a minute, and then remove the Kombu.</p>

Once the rice seasoning is prepared it is best to refrigerate it for 24-48 hours to allow the flavors to become richer.</p>
